Carlos has worked tirelessly to encourage members of the group to undertake coffee tree rehabilitation practices — maximising tree health, increasing yields, and improving earning potential.\u003c\/p\u003e\n\u003cp\u003eCarlos works closely with Simao Pedro de Deus, Karst’s Field Manager, ensuring that Hatuhei farmers receive weekly support throughout harvest. As production volumes grow and the coffee gains popularity, quality is never compromised. Only the ripest cherries are selected — often requiring multiple passes during the season to achieve optimum sweetness.\u003c\/p\u003e\n\u003cp\u003eHatuhei is located in the south-eastern part of Letefoho, in one of the region’s most difficult and remote areas to access. During the dry season, the group can be reached by car. During the wet season, this becomes impossible. Rehabilitation includes pruning or replacing ageing trees so lower branches fruit more effectively, and establishing fresh coffee forests where land allows.\u003c\/p\u003e\n\u003cp\u003eFor every 10kg of green coffee purchased, Karst pledges the planting of one seedling in their Letefoho nursery, prioritising households most in need.\u003c\/p\u003e\n\u003cp\u003eWith our 2026 commitment of 100 sacks (3000kg), we will plant over 330 trees together — investing not just in this year’s harvest, but in the long-term health of the landscape and the livelihoods of young farming families.\u003c\/p\u003e\n\u003ch3\u003eQuality \u0026amp; Growth\u003c\/h3\u003e\n\u003cp\u003eWhen we first began buying from Hatuhei, the coffees were scoring around 85.00 on the SCA scale. Last year’s harvest reached a confident 85.75. Under Simao’s watchful eye — and thanks to favourable cultivation conditions and increased rigour from the Hatuhei farmers — we expect 2026 to be the most refined harvest yet.\u003c\/p\u003e\n\u003cp\u003eThis is the fourth season in a row that we have worked with Kar-Yee, Stewart, Carlos and Simao. Both espresso and filter brews yield intensely sweet cups. Espresso-based drinks will yield a little more acidity, and stand out wonderfully against milk. \u003c\/p\u003e\n\u003cp\u003eWe have been brewing this coffee using a number of recipes (depending on your equipment), as it's incredibly versatile.\u003c\/p\u003e\n\u003cp\u003eOn our equipment (Lagom 01 + Victoria Arduino Prima), we found a great range of versatility, working well at the traditional 18 in 36 out, or a turbo shot. The best shot I tried was: 18g in, 40g out, 29 seconds.\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003eIt's worth noting that if you are running turbo shots, you need a coffee grinder with a burr set fitted that allows for a more unimodal style of grind size particle distribution, otherwise your coffee will likely taste very ashy at these lengths. It's also a good idea to have a really good set of scales (\u003ca href=\"https:\/\/www.harmonycoffee.co.uk\/blogs\/blog\/the-best-coffee-scales-2025\" title=\"Our guide to buying the best Coffee Scales\" rel=\"noopener\" target=\"_blank\"\u003ewe wrote a guide on this here\u003c\/a\u003e) to allow for accurate, repeatable results.\u003c\/em\u003e\u003c\/p\u003e\n\u003cp\u003eFor filter, consider brewing at a 1:16 ratio. From a young age Diofanor was involved in farm work, quickly learning the ropes of the industry, which would later lead him to pursue a life-long career in coffee cultivation. In 2003, Diofanor became a certified coffee farmer, continuing the work that had shaped his upbringing. \u003c\/p\u003e\n\u003cp\u003eTwo years later, in 2005, he was able to purchase his own farm, La Divisa, in Buenavista, Quindio. Sitting at around 1950 metres above sea level and spanning 14 hectares, the farm is now home to Diofanor, his wife, and their son, who is currently studying agroforestry engineering.\u003c\/p\u003e\n\u003cp\u003eAt La Divisa, Diofanor has planted a wide range of fruit and native trees alongside his coffee. Bananas, mandarins, guava and oranges grow among the coffee plants, while native species such as Guamo, Guayacanes and Tigua provide shade and help improve soil health.\u003c\/p\u003e\n\u003cp\u003eMany coffee farmers in rural Colombia don't really benefit from access to roasting equipment or machinery, and so it wasn't until late 2005 that Diofanor tasted his own coffee for the first time. When logged, it was noted that Gesha was moderately resistant to leaf rust, and as such, a number of saplings were first planted in Panama during the 1960s. But various impracticalities of the variety made it initially undesirable - a low planting density, brittle branches and low yield made it a poor choice for many farmers.\u003c\/p\u003e\n\u003cp\u003eIt wasn't until the 2005 Panama auction that this variety found itself in the spotlight of international regard, where the Peterson family entered their Gesha into the competition. Not only did it achieve extremely high scores, but its distinct florality and high acidity attracted a number of high bids from auction attendees, breaking the standing auction green coffee price record. In addition to its incredible natural beauty and rich cultural heritage, Peru consistently produces coffee beans that balance clarity, complexity, and approachability in a way that feels distinctly its own. \u003c\/p\u003e\n\u003ch3\u003eGeography \u0026amp; Climate\u003c\/h3\u003e\n\u003cp\u003eThe country of Peru sits on the western side of South America, taking cool air from the Pacific, with the northern part of the Andes providing many high altitude growing regions (among the highest in South America). On the opposite side, warm, humid air pushes in from the Amazon basin, creating a unique intersection of climates. This balance allows the coffee cultivated here to develop a phenomenal complex acidity, driven by a longer, slower maturation of the coffee cherries.\u003c\/p\u003e\n\u003ch3\u003eAltitude Range\u003c\/h3\u003e\n\u003cp\u003ePeruvian coffee farms can range anywhere from 800 MASL all the way up to 2200+ MASL, offering a gigantic range greater than almost any other producing country. While some lower altitude farms do exist, much of Peru’s most expressive coffee sits comfortably in the higher elevations, where cooler temperatures further extend ripening and enhance both structure and sweetness in the cup. While other lots have leaned more heavily into experimental processing, this harvest more closely resembles that classic Peruvian washed expression. \u003c\/p\u003e\n\u003cp\u003eThe roast approach that I have taken with this coffee has been a minimally interventionist approach, preserving as much of the original character of the coffee as possible. High grown washed Peruvian coffee beans are typically high density and lend a good helping of acidity, with a tea-like body and high levels of sweetness.\u003c\/p\u003e\n\u003cp\u003eIn order to prepare this coffee, perfectly ripe cherries are carefully selected, fermented in open tanks, and slowly dried over an extended period.
