Enzymatic Process
Similar to how in yeast Innoculated coffees, sterilised coffee cherries are paired with a selected, specific yeast to catalyse the fermentation; in this particular process, enzymes are selectively paired instead.
For this particular coffee, Lu Sun, proprietor of No Stone Estate extracted enzymes from Sarcodactylis (Sometimes referred to as Buddha's hand, a member of the citron family). Once extracted, the enzymes are added to water to dilute them and then fermented aerobically for 8 days.
During the honey processing, this enzymatic mixture is added to break down the mucilage and sealed to ferment anaerobically for 150 hours. The resultant aromatic produced by this enzymatic breakdown is a delicate floral akin to lilies. This is then washed and cleaned. Once cleaned, the coffee is dried down to the desired moisture content and sealed for shipment.
