About This coffee:
Colombia has some of the best coffee growing conditions of any country, which is why we find ourselves buying so many amazing coffees from here lately.
This coffee from Luz Helena Salazar underwent a strict washed process. The cherries were selectively harvested based on strict ripeness criteria (as promulgated by Luz Helena Salazar and Jairo Arcila). The cherries were pulped and then placed into tanks and fermented in water for 30 hours, promoting clean, fruit forward characteristics. After this, they undergo a standard washed process (removing the mucilage stuck to the seeds) and dried until reaching the desired moisture content. The beans were then hand-sorted to remove any defects. This coffee has some of the best sorting that we've seen from any lot.
Pink Bourbon (Although it has now become trendy to refer to this little number as Rosado these days, has little to no relation to the Bourbon family, but actually delineates from an unnamed Ethiopian Landrace. There is some debate on this, but this is now widely accepted.
Luz Helena Salazar and Jairo Arcila have two sons, Carlos and Felipe—who are now co-founders of Cofinet and specialise in specialty coffee.
Beyond coffee, Luz Helena and Jairo's farms are rich with other crops, including mandarin, orange, plantain, and banana, all of which contribute to the economic vitality of the community. Their dedication to quality and sustainability is matched by their commitment to providing jobs during the harvest season, directly impacting the lives of those around them.
