ABOUT THIS COFFEE


Dr Enrique Ferrufio and his family established their coffee business in 1992 and acquired Finca Aurora in 2004. The whole family works together to produce great coffee using methods that work in concert with the local ecosystem. 

Since they acquired Finca Aurora, the whole family has worked together to produce great coffee. Throughout the years they have invested in providing workers with fair wages, safe living conditions, health services, food and education. They also work with smaller producers in the area to help them improve their farming practices.

This Parainema lot, a dwarf variety from the Sarchimor family, is a great example of their skill. IHCAFE developed the cultivar through mass selection in the 1980s in response to Leaf Rust, which it is highly resistant to and also to cope with ever increasing demand. Dwarf shrubs such as Parainema are able to be planted at much higher farming densities, allowing for an increased yield per hectare. It is not common to find the Parainema variety outside of Honduras, but farms like Finca Aurora have taken it under their wing and have produced this prized lot. 

After selective handpicking, the cherries are lightly fermented aerobically for 36 hours before being laid to dry on drying beds allowing for a mixture of convection and solar drying. The cherries are raked frequently to ensure consistent airflow is present, allowing for even drying. It takes approximately 25 days for the cherries to fully dry. This slow drying process allows the cherries to fully develop their unique flavour characteristics.  

Finca Aurora is one of the first farms in Nicaragua with a fully integrated coffee operation on-site. They produce, wash and dry the coffee at the farm. The coffee is milled, sorted and bagged at Beneficio Finca Aurora under the watchful eye of the farm’s team. This allows full control over the quality throughout the process.
