The owner and administrator of Finca El Niagara is Mynor Daniel Zamora Salazar, a agricultural engineer. This is the second year in a row that we have decided to work with Mynor, and feature coffees from his farm, El Niagara.
The farm is located in Fraijanes, in the valley of the volcano Jumaltepeque, which makes the soil rich in minerals and has perfect conditions to grow speciality coffee.
He is the third generation of coffee growers. Since Mynor's grandfather acquired the farm, it has produced coffee. The farm has grown and supplied outstanding coffee for the last 120 years.
Finca El Niagara has a complicated story through time. Mynor cannot remember when he had not been worried about the poverty of the workers on the farm. Besides being a great farmer, he is a noble and dedicated human. The farm entered the speciality coffee market almost a decade ago, which was the light they needed. Mynor hopes this new generation will be willing to join the speciality coffee world. He believes that the coffee industry will change everything for the people living on the farm.
We specifically chose to work with Mynor because of his philosophy on quality, both in product and relationships.
This year, we have chosen Mynor's Catisic, a rare variety that is not often planted. There are debates about the lineage of Catisic. Many of the strains that exist in the world right now originate from Southern Africa, where it finds itself related to a strain of Catimor, but there is some debate as to whether the Catisic grown in Central America is related.
