About This Coffee
The EA or Sugarcane process involves using Ethyl Acetate, a solvent derived naturally from local sugarcane, to selectively extract caffeine from coffee. This process is carried out at Descafecol in Manizales, Colombia, a short distance from Caldas.
Villamaría, a municipality in the Caldas region of Colombia, is adjacent to Neira, Palestina, Chinchina, and Manizales, forming the South Central sub-region. The area is rich in water sources and natural resources.
Located near Manizales, Villamaría is close to El Fénix, Raw Material’s community wet mill and farm, and serves as the drying station in Chinchiná, Caldas. The station handles the harvests of 30 coffee-producing families from the nearby higher-altitude area of Jamaica in Villarazo. Due to its lower altitude and warmer temperatures, Villamaría is ideal for processing honey and natural coffees. The station uses Nuna dehydrator systems to control humidity and temperature during the drying process.
