Angelo Zapata's farm is located a short distance north of the equator in Palestina, the southernmost region of Huila. Palestina's high altitude, with the highest points on Angelo's farm exceeding 1900masl, benefits his coffee cultivation.
Angelo's farm benefits from volcanic-rich soil and consistent rainfall. Daytime temperatures rarely exceed 28°C, and at night, they seldom dip below 12°C, ensuring consistent year-round temperatures for ideal growing conditions.
The coffee is carefully hand-picked, with growers selecting only the ripest cherries. Afterward, the cherries are floated and skimmed to remove any defects or underripe cherries before being fermented in water for 30 hours and then pulped.
The parchment is delicately hulled and dried to the ideal moisture content, ready for shipment. In our view, washed coffees provide the best representation of the coffee's natural terroir characteristics, with minimal fermentation flavours imparted during processing, resulting in clean and highly flavourful cups.
