In 1995, the Bayter Family dove into agriculture at El Vergel farm, focusing initially on the cultivation of avocados. But when avocado prices dropped in 2006, they saw an opportunity in coffee cultivation. Introducing coffee varieties like catimore, red, and yellow caturra, they quickly built a highly productive coffee farm. By 2016, with guidance from coffee expert Miguel Jimenez, they shifted to focusing on specialty coffee. In 2018, they fully embraced natural coffee processes, including the innovative Koji fermentation method.

Yellow Bourbon is not typically a variety that attracts the kind of attention that Pink Bourbon, Gesha, Wush Wush etc. Tends to attract - however, upon interviewing Shady & Elias when I met them for the first time in 2020, the two brothers believed that Yellow Bourbon was the cultivar that was not only best suited to the terroir of their farm, but also the most stable, best yielding and highest quality crop they could offer also. 

As a result, some of the best coffees they have produced in terms of quality score and COE results have been the Yellow Bourbons cultivated at their farm, El Vergel. This particular lot has not had any further inoculations or processing pizzazz, it's simply a naturally processed coffee, dried in one of their custom poly tunnels. The close attention paid to the coffees and the frequent rotation of the cherries, in addition to the slightly cooler climate temperatures found in Tolima (18-26c) has allowed for an elongated natural processing. This slow drying has led to incredibly complex, boozy and umami characteristics .

Ever since I met Shady & Elias for the first time in 2020 and hearing about their passion for innovation first hand, this has been a collaboration that I've been extremely looking forward to. This release marks the fourth harvest in a row that we are collaborating with El Vergel!
