In 1995, the Bayter Family dove into agriculture at El Vergel farm, focusing initially on the cultivation of avocados. But when avocado prices dropped in 2006, they saw an opportunity in coffee cultivation. Introducing coffee varieties like catimore, red, and yellow caturra, they quickly built a highly productive coffee farm. By 2016, with guidance from coffee expert Miguel Jimenez, they shifted to focusing on specialty coffee. In 2018, they fully embraced natural coffee processes, including the innovative Koji fermentation method.  

Armed with curiosity and a touch of wizardry, they collaborated with Kaapo Paavolainen to conjure up a fermentation technique using Aspergillus Oryzae – a bit of coffee alchemy to enhance both flavour and life quality! 

"To produce these unique coffees, we utilize a proprietary method involving Aspergillus Oryzae, a fungus renowned for its ability to enhance flavor profiles. This fungus is carefully cultivated alongside steamed rice, dried, and subsequently ground to create an integral component for the coffee beans. Following this, the beans undergo anaerobic fermentation, distinguished by a distinctive white layer. After sun exposure on African beds, they are carefully stored in grain pro bags to ensure stability and optimal preservation. This meticulous process provides the beans with a rejuvenating treatment akin to a spa day, but with added sophistication."

Ever since I met Shady & Elias for the first time in 2020 and hearing about their passion for innovation first hand, this has been a collaboration that I've been extremely looking forward to. This release marks the third harvest in a row that we are collaborating with El Vergel!
