About This Coffee
Harvesting & Cherry Selection
Brayan Smith, along with his team, harvest only the ripest cherries at Finca Las Brisas. After picking, the cherries are hand sorted and floated to remove any low density, underripe and defective cherries.
Controlled Fermentation
Once the coffee has been sorted, the cherries undergo a 30-hour controlled underwater fermentation, allowing Brayan to enhance the coffee's natural flavour profile without the fermentation running wild. This controlled fermentation allows for the gradual breakdown of the plant sugars and organic acids, further increasing the complexity of the coffee and setting the stage for a wonderful flavour profile.
The fermentation is limited to 30-hours, as beyond this, the coffee begins to develop other characteristics associated with fermentation, rather than express the natural flavour profile of the ripe Pink Bourbon cherries, resulting in an effervescent and fruit dominant cup profile.
Washing & Drying
After fermentation, the cherries are pulped and the mucilage is washed thoroughly away. The parchment is then spread out in thin layers on raised beds. The team turns the parchment consistently until the coffee has been dried to 10.5% moisture. These are then vacuumed into 12kg bricks, perfect for transportation. Brayan's green coffee is particularly aromatic, and usually results in an audible 'PHWOAR!' every time we open one of these bricks. He's an incredibly proficient producer and we're very pleased to be stocking such an incredible coffee!
About Pink Bourbon (Rosado)
Origin & Genetic Background
Pink Bourbon is named after its reddish-pink hue. Originally it was believed that Pink Bourbon was related to the Bourbon family (you can see where the name may come from now), but it was later discovered that Pink Bourbon (Although it has now become trendy to refer to this little number as Rosado these days), has little to no relation to the Bourbon family, and instead actually delineates from an Ethiopian Landrace, believing to have emerged as a natural mutation in the San Adolfo region of Huila, Colombia in around 1980.

Pink Bourbon is perfectly suited to high altitude, stable, equatorial climates, making it ideal for growing in Huila. The cup score potential of Pink Bourbon is unbelievably high, and its easy availability makes it a favourite among baristas wishing to compete with at competitions.
Plant Characteristics
Pink Bourbon (Rosado) trees are typically medium stature, making them very easy to manage and harvest. The branches are less brittle than other varieties and the variety is also relatively resistant to certain diseases, such as Leaf Rust and Coffee Berry Disease.

In general, Pink Bourbon is known to be like a sponge to its terroir, much like Sidra, but also carries its own set of defining hallmarks like Gesha. Classically, Pink Bourbon coffees have exceptionally high natural sweetness, high florality, a vibrant, typically red fruit or citric dominant acidity and a silky body.
