"The Lady is a processing facility created in 2018 by two leading lights of the Myanmar specialty scene: Su Nandar Linn and Thi Ha Gyawalie. Both are responsible for running their separate family farms but have joined forces with The Lady to support and champion the efforts of farmers in the Ywangan region with its limited edition lots produced exclusively by women. Cherries are collected from 51 women farmers from Nwar Ban Gyi village. Cherries are floated to remove underripe fruits / defects before pulping within 4 hours of harvest. Both dry and wet fermentation methods are utilised to create this coffee. Coffees are dried for approximately 20-24 days on raised beds." - Indochina
Su Nandar Linn and Thi Ha Gyawalie have been at the pioneering forefront of Myanmarese specialty coffee production, introducing many new innovative processing methods to Myanmar. Their combined willingness to experiment has led to the production of many high quality lots that have boosted the profile of Myanmarese coffee in recent years. The Carbonic Maceration processing method originated in French winemaking (specifically in the Beaujolais region); it was popularised in the coffee industry in 2015 by Sesa Sestic during his 2015 World Barista Championship routine.
